Pinocchio's typical menu includes a variety of dishes catering for all sorts of tastes.
At your arrival, after having been welcomed and having been advised on the most suitable wine for your meal, you will find a little basket of vegetables to be dipped and savoured with three 'pinzimoni' (sauces made with olive oil, vinegar, salt and pepper) containing respectively local olive ('taggiasche') patè, anchovies from the Ligurian Sea and sun-dried tomatoes. This will be followed by a selection of salamis to be cut by the client: donkey salami, pork 'cacciatorini'(small dried sausages), spicy hot salami from Calabria, and when the season allows it wild boar and goose salami.
Our super-antipasto is completed by a series of appetizing dishes belonging to the Italian culinary tradition such as Salted Meat offered with a mustard sauce, 'Tomini', a goat cheese from Piedmont, served with a truffle perfumed sesame crust, Ligurian Cima (an egg based cold cut), steamed Octopus from the Gulf and the famous Lard from Arnà served with chestnut honey and whole nuts from Piedmont. Along with dishes born out of Italian cuisine we have those originating from the Spanish one, such as the famous Serrano cured ham imported directly from Salamanca in Spain, which, according to the Iberian tradition, is cut directly in front of our Clients. We also serve other types of cured ham: San Daniele, Parma and Des Bosses (from Val D'Aosta). The antipasto ends with a hot dish in which, along with the baby fish pancakes, you can savour the 'fonduta vol au vent' (tiny cheese pies) cooked according to the recipe from Val D'Aosta, or the cheese 'n ham puffs or the sausages with sweet cicely cooked on the griddle according to the recipe from Romagna.
Our first dishes are related to the Italian culinary tradition: along with the famous lean meat filled Ravioli, we propose the borage 'Chicche alla bava' (gnocchi with cheese), Tagliatelle (flat noodles) with either mushroom or whole nut sauce; in our menu we also have saffron Risotto and meat or vegetable Lasagne.
